Well, hey there, sunshine, if you're a long time listener, I want you to know how much we absolutely love hanging out with you. We seriously feel like we're right there in the living room with you having our matcha latte, our peanut butter cup shake, together Plant based, of course. We are having our peanut butter shakes right now and let me tell you how good they are. Seriously, under five minutes happiness, pure joy in the cup. So you can do this again, not hard. And today we're talking about how do you get more greens. I want to talk about a simple way that you can get your lettuce, your salad greens. You don't have to just always eat salad. You know, we think about plant based, and then it comes to your mind rabbit food.

Speaker 2:

And it comes to your mind. I mean, that's the majority of what we hear. I just can't eat salad every meal. Well, no one's asking you to so that's alright.

Speaker 1:

No, we're totally not asking you to do that. We do eat salads, but we don't eat them like we used to eat them, and we don't always get our salad greens in that way. That's what I want to talk about today, like how do you get more salad greens into your meal? What are some things we do. Well, this is something Jared noticed that I started doing. What was it I was saying to you, you can kind of introduce and share what happened.

Speaker 2:

Well, you had said not too long ago, like why haven't I been putting salad greens on my baked potatoes?

Speaker 1:

Yeah, why have I never done that before? And it's one of my new favorites. Okay, so I have this chili, this pot of chili that I made plant based. It is so delicious and it's sitting in the fridge for a couple of days, right, so it's leftovers and I'm thinking, yeah, I don't really want to cook, I want something leftover. So I'm looking there to see what I've got to throw together so I can make a microwave or Instant Pot potato like a baked potato. Basically, right, I'm going to open it up, heat up my chili, put the chili on there and then put. It's almost like a chili salad or a taco salad. Well, and you would be tempted to stop right there with the chili and say okay meal done Right, especially if you put your greens in your chili, like I teach you how to do on some of the other episodes. Yeah, you definitely could do that. But what if I have my chili on top of there and then I put my salad on top of there and as a yeah. So I'm gonna just tear up my lettuce into little bite-sized pieces and just fill that bowl full, and then on top of that I'm gonna put a little salsa, a couple of spins of salsa and some lime juice as my dressing for the salad portion. So I've got this loaded baked potato, but it's loaded down with greens, and I could even put corn, like I had some frozen corn. I could throw it out or even put it on there Cold, depending on how you like.

Speaker 2:

And if you've heated the chili, then that's gonna thaw it out, but it's still fresh, Right? It's still gonna have that sweetness and that crunch. Give it some extra texture.

Speaker 1:

That's it. So it's a chili top, baked potato with a bunch of lettuce on it and some salsa, maybe a little lime. You wanna get fancy you like. But, Anita, I like avocado when I eat Mexican type things, but I like corn. Like I said, you could put corn Do it. I like cilantro, but I want raw onions and garlic. Let me tell you something Anytime you can get raw onions and garlic on your food, do it. It's gonna help you fight cancer like nobody's business. Do it. Everybody should be eating the raw garlic you can get bacterial too. Help keep you healthy, oh yeah get your raw garlic, get your raw onion on there, whatever toppings you like, put it on there. But for me it just brought me joy. You're having this big bed of greens on top of my potato, so I scoop into my salad and these big chunks of potato would chili come up on there? I don't know. It was just so good. It was almost kinda like the patros that we used to have. And I'll sometimes make a taco salad like this, where I'll do the big, huge bed of greens, mixed greens, and then I'll do our chili on top and I'll do all my taco toppings Like they would do at Pedro, and then they would put chip. So I might just bake one of our corn tortillas. That's just nothing but masa harina or the cornmeal with some lime in it and that's it, no oil added. And then I crumble those over it and that's my Pedro. That's another great way to get your lettuce. But why have I never thought incorporating a potato into that mix? I will never know I could do it where I did the bed of greens, I did the chili, then I did the potato, or bed of greens, potato chili, mix it up, it doesn't matter. But for me it's just been so simple lately to take that hot baked potato, smash it in my bowl, open it up, get that chili on there, gets a bunch of those greens, and then that salsa and lime, oh my goodness. And if you wanna get real fancy, a five minute cashew cream drizzle across the top. Yes, please, I'm all in. So again, I want you to be thinking. You know what I'm thinking. Do you know what I'm gonna say? How long have you been here? What am I gonna say? It really is. You said it, I heard you in my mind. I know you said it. Just that simple. And this is how it's done. This is how easy it is to get more greens into your life. It doesn't have to be a Salad salad. That's why I'm saying if you do a taco salad, you're kind of thinking salad, it's the lettuce and this, this and that. But here I put my lettuce on top of my baked potato and fill my bowl and it's totally feels different.

Speaker 2:

You'll grab a big handful so you're getting a good serving and you don't have to try to eat a big Gigantic bowl of salad all at one time, if you think outside the salad box.

Speaker 1:

Yeah.

Speaker 2:

I was saying think outside the salad spinner outside the norm of what you think as greens. Right, Then you incorporate a little bit here and there. Where could you add some extra greens? In what you're eating tonight. Right and I would say sometimes it's gonna be way better than you anticipate.

Speaker 1:

Absolutely, you're gonna find your new favorites. I mean, I never thought to do this before. I just tossed it on there and I'm thinking why have I not been doing this right? Pile your wraps up. Put bit a ton of salad greens in those sandwiches. Why just the little token lettuce? Why not a lot of greens in your wraps, in your rice wraps, in your tortillas, inside your fajitas? Why not put it inside your? Why not use them and layer them up the lettuce leaves and stuff things into them? You know you could do like a chili boat in the lettuce leaves with the chili and the potato and all these.

Speaker 2:

Your lettuce becomes the wrap. You don't have to stick with the spring mix, although we have that a lot of times on hand, but yeah, when it's in season having romaine, having iceberg, having butter lettuce I mean there's so many different kinds of greens out there that you can incorporate and use in different ways. So in this way, if you're using it as a wrap, you're still getting it, but you're not having salad, you're having a wrap.

Speaker 1:

I'm seriously getting hungry right now. I find you how to wrap. I might start wrapping as well, because you're talking about wrapping, and that's what I'm thinking about in my mind. I got a little beat going on Y'all share. Not right.

Speaker 2:

Oh my goodness beat with the world.
