Anitayou hear something's healthy, and then the next day you hear it's not, and then you hear, oh, well, somebody was a plant-based doctor, and then they switched, and they're no longer a plant-based doctor, and that's exactly what happened in this recent video that we saw. We saw the doctor. Her personal interview, so we're not talking to you from the perspective of someone who's heard somebody talk about her interview. We actually watched her interview, and we saw what she said, what happened with her, and there are a couple of things that we want to bring out so that you can avoid the confusion here when you see things like this and understand what was going on behind the surface, because it matters for you. It matters to your health, to understand the way of life that you're choosing and why it's a great choice So in this interview, there was a cardiologist, and she's been practicing how many years, Jarrod?
JarrodQuite a few. It's been decades., At the time of this interview that we saw that was just filmed and released recently, she's 64 years old. So she's been a doctor for a very, very long time
AnitaSo she was actually in lifestyle medicine
Jarrodyes. Well, she, back in 2015, went completely whole food, plant-based and went into lifestyle medicine. She revamped her practice and was teaching her patients how to do the very same things so that they could then improve their lives, improve their health, and improve their health outcomes.
AnitaAnd like a lot of us We went into medicine, we went into nursing to help people to not be sick. But many of us went into it to try to also keep ourselves from going down the path of sickness or some, difficulty with our health.
JarrodThere could be issues in our family that got us thinking, "Hey, I don't want this to ever happen to me or to my other loved ones or patients." you don't want anybody to have these chronic debilitating conditions
AnitaSo then what specifically was it that drove her into cardiology?
JarrodIt was diabetes. She had grandparents that died with diabetes, and she saw the complications that went along with that, how they suffered with it, and she was afraid of getting it. I don't know that she was married at the time she thought about going into medical school, but I imagine that was probably on her mind as well. A spouse, children, don't want them to have it, because she had such a strong family history for diabetes.
AnitaSo she dug into the research, which is something that you really love doing a lot too. I know you Obviously having a degree in cellular and molecular biology as well as being a physician assistant, and then you worked in research at Medical University of South
JarrodOr yes, for a number of years. I've
Anitaseen you just maintain the love of digging into the research. So she did that. She dug into the research and she started finding the pioneers of lifestyle medicine. She started finding all the research that we've seen that's been there for decades,
JarrodAnd this is after she had completed her medical training, became a cardiologist. She then found out about lifestyle medicine and revamped her practice style
AnitaSo how long was she in lifestyle medicine?
JarrodShe started in 2015, but then in 2024 started changing her mind about some of the things that she believed.
AnitaAnd what I think is interesting is why did she change her mind?
JarrodFrom her direct interview with another doctor who is carnivore, she noticed a couple of issues. One, that her fasting blood sugar was staying slightly above normal range, and of course, for someone that's scared to death of diabetes, that right there is gonna be a huge red flag. But she also said that she noticed her energy level would drop when she was in the middle of running. Now, she does a lot of endurance athletics. We're talking about ultramarathons, very, very long distances. I mean, a mara- She's really pushing her body so for a marathon,
Anitaa little for some exercise. She's really pushing her body.
Jarrod26 miles. I mean, an ultramarathon, I believe, is 52 miles, and then you've got triathlons, which are cycling, swimming, and running. I mean, this is a lot of long-term, high-level activity. So she was noticing that her fasting blood sugars were elevated just a little bit above the normal range. So she started using a constant glucose meter and tracked it and started noticing that the blood sugar levels looked like they were hitting higher and just out of the norm of what she would expect to see, what we're taught in our medical training.
Anitawe're taught in our medical training. We're taught a lot of things in our medical training. Or
Jarrodtraining. Or not taught a lot of things in our medical training. So, and our eyes have been opened to some of the things that we were taught that just weren't true or that we shouldn't have been concerned about in the first place. So what
Anitaor not taught these in our medical training. So, and our eyes have been opened to some of the things that we were taught that just weren't true or that we shouldn't have been concerned about in the first place. So far we've covered because of her fear of developing diabetes, she went into medical training. She wanted to learn as much as she could to prevent herself from developing type 2 diabetes, which was rampant in her family, which is noble. I mean, that makes sense that you would
JarrodIt's understandable, yes
Anitaunderstandable.
JarrodSo
AnitaSo now she's decided to constantly wear a glucose monitor so she can always see what her blood sugar levels are running.
JarrodShe'd be able to monitor it, um, like the name says, continuously throughout the day. So whatever she ate, she could see that the levels would rise, and she did report some of the foods that she had eaten. Interestingly enough, they were plant-based, but, like, one thing was eating a poke bowl out at a restaurant with white rice.
AnitaAnd then my thought is, okay, white rice, that's gonna put your blood sugar up higher. We say eat brown rice, eat the whole grains. That's whole foods. So again, this is plant-based, not whole food plant-based. And we're not saying if you're whole food plant-based, you can never eat white rice. We're just saying if you're really worried about your diabetes and you're continuously wearing a glucose monitor, just know that if you eat not whole food plant-based, but plant-bl- based, your blood sugar is probably gonna go up higher. These things are gonna spike it because what are they lacking? A lot of the nutrients and the fiber that is found in the rice bran has been removed from the white rice. Not to mention that most people, when they make a Japanese type or an Asian type white rice, they will p- use a paddle and stir in vinegar as well as white sugar. So now there's probably white sugar on that white rice that she's eating, and if it had any kind of sauce, a lot of times they also add sugar to the sauces. So you're measuring it and you're worried about meals that you're eating, like plant-based things that are going to spike your blood sugar higher than if you're eating whole food plant-based. So this is really important to watch when people start explaining things like this, think about what they're actually doing. 'Cause in her mind, it's still whole food plant-based, but she's eating things that really aren't the whole foods, and now you're dining out and probably getting a lot of added sugar to that as well.
JarrodAnd in my mind, I wonder if the fear caused her to have a little bit too narrow of a focus. If she had a wider angle focus, might she have seen, hey, there may be some sugar in with the rice, or maybe there is a sauce on there that is sugary that may bump it up. Now, she is an educated woman. She's a cardiologist. We don't know that she didn't consider those options, but she also didn't say that in the story. And she mentioned there were some other foods, and she started seeing this rollercoaster ride up and down, so then she became fearful about that. And then a couple of years ago in twenty twenty-four, she then decided to start adding animal-based foods. She mentioned specifically fish in the beginning.
AnitaI have compassion on her because when you start looking at things like that and you get so focused on things like this one level and that one level, and you're trying to monitor, and she was so focused and fear-driven on it that she's now wearing a continuous monitor all the time, and looking at it, and worrying about when it spikes up. When she dined out and ate white rice and had the stuff added, like Jarrod said, we don't know whether or not she considered it. But then I think about, biblically, God's told us, "Do not fear," because it's not good for us. It's not healthy for
Jarrodus. He says it a lot.
Anitahe says it right around 100 times in the Bible using different types of phrases, "Do not fear." Why? Because when we live in fear, it is not good for us because we are saying to God, "I do not trust you. I have to figure this out myself." And usually fear, like this type of fear, it's not the kind of, hey, the bear just ran out in front of me in the middle of the road. This is a unfounded concern over something that does not yet exist, and that's exactly what was happening. She did not yet have diabetes, but she had worried about it. She'd worried about it from the time she was young, and now she's in a fear-based cycle. Active fear, does it affect blood sugar? I think that's a question that's worth asking. Like, if you get yourself in a fear cycle, does that affect your blood sugar?
JarrodIt conceivably could, you have stress hormones like cortisol. One of its actions, it raises blood sugar levels. When you have adrenaline pumping in your system, it raises blood sugar levels, and it makes sense that it would do so because if these hormones are getting your body ready for some type of response, a fight or flight response, then your muscles are going to need energy, quick energy. So if you live in that constant state, is that going to adversely affect those levels? Yes.
AnitaYes. Knowing what we know physiologically about the
Jarrodtalking about fear, what is the one tactic, one of the major tactics that our enemy uses to control us?
AnitaYes, exactly. Fear.
JarrodSo our Father says, "Do not fear," but our enemy uses fear as a tactic to control us, because when we become fearful, many times we stop using critical thought processes. We get into a fight or flight response, and it's more of a reaction than a thoughtful response to the situation. Now, back in 2024, she started eating some fish, she says, and she was concerned about her omega-3s couple months later, she then had her hemoglobin A1C measured. That is a screening and monitoring tool for diabetes. Short medical fact here. There's a little portion on our hemoglobin molecules that has a certain percent of them with a bound glucose, a bound sugar molecule to that one little site. The percentage of them that are sugared the medical term is glycated, but the percentage that are sugared depends on what your sugar levels are in your body. So when we're looking at what is normal, below five point six is normal. When we get a little higher than that, that's when we get into the pre-diabetic range. And then according to the American Diabetes Association, diabetic is six point five and higher. So this doctor, when she got her A1C checked, it was five point nine. That put her in the pre-diabetic range, and according to her story, that really shook her badly because this was the one thing she'd been avoiding her entire life. And now according to the number, this one number, it says she's diabetic.
Anitashe's diabetic. So how was she eating according to her report when she checked her A1C?
JarrodShe was eating plants, but started incorporating animal-based foods
Anitahad already started eating animal-based foods and did not check her A1C prior to.
Jarrodto- Prior. She says that she was afraid to because she didn't really want to know the number.
AnitaShe was what?
JarrodShe was afraid.
AnitaOkay.
JarrodSo she didn't actually check that number, although she did check her blood sugar. She used constant glucose meter at one point and saw that she had some fasting, which fasting should be below 100, but she had fasting sugars around like 103, 107. We're not talking really high here, but it was enough to where in her mind it said, "There's something wrong here."
AnitaBased on the fear
Jarrodon fear
Anitahistory, and she's looking at a number, and she's getting scared, and that's driving her decisions at this point, is what it sounds like from hearing her. because we both watched the interview, and that's what we saw.
JarrodThen she had an elevated number, the hemoglobin A1C. Not bad, but elevated.
AnitaAnd again, that was after she had started eating animal products.
JarrodAnd then after that she went into a carnivore diet, went meat-based, and the interesting thing to note though in research, when they look at athletes that are endurance athletes, again, we're talking marathon, ultramarathon,
AnitaRunning more like she was running than somebody who's just going out for a little morning jog.
Jarrodnot a mile or two jog. We're talking in the 10s. Even some of these people do 100 miles a week when they get into this level of activity, level of fitness. Studies show that these runners have slightly elevated glucose levels, sugar levels, and slightly elevated hemoglobin A1C levels, that because of the amount of activity they do, they have elevated adrenaline levels, elevated cortisol levels that do exactly what we were just talking about. They can make your blood sugar level go up. So when you're looking at the numbers, it makes it looks like you have some type of metabolic problem, which the metabolic diseases are high cholesterol, high blood pressure, high blood sugar. It could look like that if you're looking at the numbers, but she was extremely fit. I mean, she was running all the time.
AnitaRight.
JarrodSo she's not having any problem metabolizing sugar, but We believe that her history with her family has led her to this fear that has now influenced her decisions, and she's left whole food plant-based And I want to touch on the fear again in a minute,
Anitasince she's left the whole food plant. And I want to touch on the fear again in a minute, but I want to talk about what happened to her as a result. So now she's carnivore meat-based. What's happened to her levels that cardiologists are most concerned about? 'Cause now as a cardiologist who tries to help her patients Have healthy LDL levels, healthy cholesterol levels, because we know when that's not healthy, right? Healthy outcomes. know that when the LDL goes high, there's a whole host of problems. What are some of those?
JarrodWell, it clogs your arteries, which then affects everything. So then it affects your heart. That's where we see the heart attacks. But you can have ischemic bowel disease, which ischemia is just low blood flow. So arteries that go to your bowels, you're not gonna get enough blood flow there. So you- Arteries leading to the disc in your back, you're gonna have degenerative disc. I mean, it's just wherever there's interrupted blood flow, there are problems.
AnitaRight. If you don't have good blood flow to your brain, you have Alzheimer's or a stroke. Low blood flow to any area of your body causes two basic things. It causes a lot of different things, but let's just talk about the two basic things. The trash can't get out, and so it builds up. The nutrients and the great stuff that your body needs to fight off inflammation and fight off all those things cannot get into where they need to go with low blood flow. So those are the two problems that you're looking at with low blood flow. And what area of your body does blood flow affect? Every single area. Every single area. And so that's why we see whole plant foods help with so many things, because they open up blood vessels. We've seen it on film. they actually open up blood vessels over time as you eat more and more of these foods that were created for optimal health, according to Genesis And according to the modern day research.
JarrodSo when she went carnivore, her LDL cholesterol went up through the roof. The total cholesterol went through the roof, which is what we would expect to see. If you're eating primarily meat, well, the only source of cholesterol is meat, eggs, dairy, animal products. But-
Anitabecause plants have no cholesterol, zero
Jarrodno cholesterol only animal products do. And fiber helps to bind the cholesterol to flush it out of your system, so you really, you have more of a natural flushing action when you're eating a whole food plant-based diet full of fiber.
AnitaRight. Well, Because the only type of food that has fiber in it is plants.
JarrodSo with her levels, they went through the roof, but she seems to dismiss it saying, "Well, that's not really a problem." However, there is a plethora, an absolute plethora of research that shows that that's not true, that the higher the cholesterol, the higher the risk of cardiovascular disease.
Anitawhich in turn affects every part of your body that we've just covered the past couple of minutes. So we have a cardiologist who spends her days helping people manage their cholesterol to keep it a healthy level, because we know that that affects cardiovascular health, and she's brushing off her newly elevated LDL of 210 in the interview as saying, "Well, it's not really that concerning."
JarrodAnd normal LDL should be below 100, and she was at 210. There's also a lipoprotein called apolipoprotein B, which is a protein that's part of the whole cholesterol molecule. The higher the number, the higher the risk of it causing damage to the inner lining of your vessels, because it can actually get into the lining of your vessel. Her level is 217 when normal would be below 80, so she's definitely over double. She'd be, what, like two and a half times the normal upper limit. But she dismisses this, and we know that these are potential risk factors, that these are contributors to cardiovascular disease.
AnitaBut I want to say one thing. Getting so focused on the numbers is where a lot of the problems come in that we see. This doesn't mean we can't use labs to our benefit. It's great that we have the ability to look inside and see what's going on, but we're looking at these one-off numbers, and not looking at the whole picture many times. So we could be like, "Ooh, LDL is bad," which having it that high is not good. And she could look at, "Ooh, well, my glucose is going up a little bit. I'm freaking out." And so out of fear, she's now made a decision that we know drives up her LDL, which according to the research can be very damaging to the body for the reason we've just gone over because your blood flow affects everything. And so we have this fear-based mentality,
JarrodAnd, and we're not saying like you're saying, Anita, we're not telling people not to get labs done. I order them all the time, but we need to have a right perspective looking at the numbers. Don't let them drive decisions out of fear, especially if there's just a slight deviance from the, quote-unquote, "normal range."
AnitaAnd don't let fear cause you to go poking and prodding into something when you don't have a reason to. I just wanna throw that out there. Like, don't let fear cause you to start thinking, "Oh, maybe I have this, maybe I have that, maybe I have... Let's test this, test that, test this," and you're doing all this stuff, Because fear is a terrible doctor. Even if you are a doctor, fear is a terrible doctor. What people fear, we see time and again they tend to walk into. This is biblical. You'll see it in the Bible. choose this day. Choose life or death, blessings or cursings And then Deuteronomy 28 gives us what? 14 verses of the blessings, and then the cursings go on from there. And so what you wanna see from a biblical standpoint and from a realistic standpoint of looking at people that we know who walk in fear, they are sicker. They deal with a lot more things, because fear can open up doors in your life that you don't want to walk through. So instead of following fear, choose to be led by God and His Word, but also follow the evidence. Jarrod and I are not saying, "Don't follow the evidence. Don't look at labs and things like that." We love evidence. We were just talking about how Jarrod went to school because he loves the evidence. You worked in research 'cause you love the evidence, right?
JarrodYes.
AnitaWe don't have to blindly follow but don't get so fear or lab-focused. Instead, there's a better way, and I suggest that the better way is getting outcomes-focused. Getting outcomes-focused. And what I mean by that is follow the one who has what you want.
JarrodThe result you're searching.
AnitaThe result you're searching. Yes. Follow the one, that's a great way to put it. follow the one who has the result you're seeking, the thing that you want in life. this applies on so many levels. It's not just health. Look at wealth. Let's just take that for an example. If you want to have millions or billions in your bank account, who should you be following and listening to? The people who have done that already, It's the same with your health. So when it comes to your health, I wanna ask you this: What do you want? What do you want? I would venture to say your two answers to me would be, "Well, Anita, I wanna live a long life because God has given me breath in my lungs. I wanna be here as long as possible to carry out the mission that he's placed in my heart, the dreams that he's put here. I wanna help all the people that he's put me here to help. I do not wanna go to the grave and have one person not helped that I was sent here to help." That is what light says that this is why we show up here week after week. This is why we've created the accelerator experience. This is why I've written all the recipes, because we're lit about this, because the enemy is the one who comes to steal from you and kill you so as to destroy your ability to fully live your calling
JarrodAnd your legacy.
Anitaand leave your legacy. Because if you don't write the books, the books won't be here when you're gone to live on after you to help people. If you aren't able to tape the YouTube videos, if you aren't able to create the programs, what could help people get set free? Who's gonna do that, So when it comes to your health, what do you want? One, you want long life. You want to live a long time. You know what else? God wants that for you. God wants that for you He says his desire for you is to go from strength to strength and glory to glory with your leaf not withering and your sap not drying up in old age. He wants you to be strong like a tree planted by the rivers of water, where you have the source of nutrients that you need because you're rooted and grounded in him. You're rooted and grounded in his love. You're rooted and grounded in the life that only comes from intimacy that you have with him. That is your life flow. That is where you will bloom and come alive. That is where long life is found. There's so many verses in the Bible about long life. We dive into that more with our clients, but what we want you to start thinking about when you ask yourself, when it comes to my health, what do I want? Number one, you want long life because you wanna be here as long as possible to live out your God-given calling, not taking anything that was meant to come out of you to the grave. You know, God has things he's put into you that he wants to come out of you into this world because it's about bringing his kingdom come to this earth through you. His will, like it's being done in heaven. That's the prayer Jesus told us to pray. Pray your kingdom come, your will be done on Earth as it is right now being done in heaven. And then give us today the bread of tomorrow is actually in the next line, and what that means is make it in my life today the way it will be when you return and you're ruling and reigning here on Earth with us. That's all about the same thing, and how can that happen if we're fear-based, if we're fear- driven, if we're afraid, And that's messing up our hormones, and that's messing up our blood sugar levels, and now we're monitoring the blood sugar levels. the fear is now driving our decisions that we're making in our life. And before long, you're off course, and your blood's clogged, and it can't get anywhere, and now your life's cut short all because you heard someone say, Hey, I was afraid, and so I did this, and now I'm not so afraid, and I'm just gonna ignore this other marker that's really bad." Anitajust gonna go there, and that's the truth. So we've been stolen from on so many fronts, And we don't want to allow these things into our life. We don't wanna allow an open door to fear drive medical decisions. I mean, there are literally people who, Recently, a doctor did a scan on someone we know. They basically told them they had a tumor. They needed to get the tumor poked and opened up, in other words biopsied. So now you have something your body's walled off, now you've opened it up to where things can come out of what was walled off by your body naturally. They were having no symptoms, nothing, no problems with it. We need to biopsy it to know how to treat it, so now we're gonna poke it and open it up. And thankfully, I'm so thankful, they held off and didn't do that. Now, I'm not telling you to do that for your decision.

AnitaNot giving you specific No, this is not specific medical advice for you, but we have to think through these things, think through what we know. So the body had walled it off, so now it gets poked. So they had prayed about it, thought about it, just didn't feel right about it, decided to wait. So then they go for a deeper scan and find out, hey, it's not actually a tumor. So they've saved themself from having a needle to go through their brain.

AnitaWe have to seek the Lord in these matters and not be driven by fear, because if fear had driven that decision, it could have introduced infection and a lot of other things could have happened as a result. So I'm not going there. That's not what this episode is about, But what we just wanna open your eyes up to is when you hear somebody say something, look at, do they have long-term what I want? And if not, or you don't know yet because they haven't walked enough years in their life for you to see, then you wanna ask with your help, "What do I want? I want long life and strong life." And the third question is, who has this? Who has this? And the research solidly shows again and again, the groups of people that have the longest life and the strongest life are the people who eat whole plant foods, whole food plant-based.

But just think about how when we follow biblical principles and we trust in God, things can become as simple as who has what I want, and what did they do to get it? You don't just try to nab what they have. You wanna gain the wisdom that they had that got them what they have. That is actually a law of prosperity. You're not gonna go after... Like, if someone offered you a bag of money, or they had the ability to give you the wisdom to make the money, What would the wise person choose,

Anitaknowledge of how they would gain the money. So it's the same with the health. So who in this world has the longest life, the strongest life in those years, And that answer is solidly proven in the research to be those living in the blue zones, and you can look that up. This isn't a blue zones episode, but look that up, the blue zones, and you'll see that those people are eating whole plant foods, whole food, plant-based. So we can worry about food and labs and whatever you choose to worry about, and it can actually drive the diagnosis that you're trying to avoid. By running from a diagnosis, you could actually run straight into it if fear is behind your decisions And that is not what we want for you. We hope this episode has caused you to think a little deeper and a little more simply Again, we're not saying labs are bad, don't look at labs. We're not saying any of that. That would be foolish. What we are saying is that is a relatively new construct within the past 100 years, 40 years when you're looking at pulling labs to find something wrong that has no symptoms attached to it so that you can prescribe a medicine to improve it. That was in the past
JarrodSo we're looking back, back in the 1980s, we started seeing lab values, even though the person was asymptomatic, that then started driving prescriptions. And to look at the data, if you look at cholesterol, cholesterol going up, we do know that with time, that will cause problems, so addressing it is not a bad thing. What we question is the way they were addressing it, because we would say diet, lifestyle, activity, community, all these aspects are gonna do a far better job at managing these issues than simply a pill.
Anitawe know that movement can help to improve those numbers. We know that eating whole plant foods, because you're not getting the cholesterol and you're getting fiber and hundreds of thousands of other things that they know are there that they haven't even put a name on yet.

AnitaGod put them in there, and we're literally looking at one or two things and freaking out about those things. Let's look at the outcomes. Yes, you should look at labs. There's nothing wrong with that. Again, that's not what we're saying. But what kind of health do you want? If you want, a long life, you want a strong life, you wanna ask yourself then, "Who do I know has this?" And then when you find that answer, a lot of the confusion starts to fall away. And then the only question is, "Now who knows how to eat this way? Because I know this works, so who knows how to eat this way and make it work with my busy schedule, and make it taste better than I could imagine, even better than the things I'm eating now?" We hear that all the time. "This is the best way I've ever eaten. It's the simplest. It makes me feel amazing." and then we see them out there doing all the things that God's placed on their heart, and then the people that they're helping and it's this amazing ripple effect, and it's what God wants for you. He created us to live well, not sick. Sickness came as a result of the Fall, which is the same time people started eating meat, because nothing died before the Fall either. I'm just throwing that out there. We're not saying it's a sin to eat meat. We're not saying that at all. What we are saying is the original way, when we look at the result, When we look at the studies in the areas where people live the longest and the strongest, it is, surprise, the areas where they're eating the original diet we were intended to eat according to Genesis 1:29.
